Recipes

Gluten-Free Oatmeal Cookies

You can never go wrong with a little bag of cookies for your Christmas hamper.  These unique and delicious gluten free oatmeal cookies will have your friend or family member begging for the recipe.

Ingredients:

1 cup shortening
1 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cup gluten free flour mix (with xanthan gum)
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cup gluten-free oats OR quinoa flakes
3/4 cup your choice of nuts (optional)

Directions:

1)    Preheat oven to 350 degrees
2)    Add sugars to shortening
3)    Add egg and vanilla and beat together
4)    Add flour, cinnamon, baking soda, salt and oats in a separate bowl
5)    Combine mixtures
6)    Add nuts
7)    Turn into 1 1/2 inch balls and place on cookie sheet
8)    Bake for 10-12 minutes
9)    Let cool and package

Angel Food Candy

Here’s a yummy hard, chocolatey candy which would go great in a little decorated bag in your chocolate-lovers Christmas hamper.  Candy might seem intimidating to make, but it’s really not as hard as you’d think!

Ingredients:

1 cup sugar
1 cup brown rice syrup or corn syrup
1 tablespoon apple cider vinegar
1 tablespoon baking soda
1 bag semisweet chocolate chips
1 1/2 tablesoon vegetable shortening

Directions:

1)    Butter the edges and bottom of a 9×13 pan
2)    Stir together sugar, rice or corn syrup and vinegar in a pot over medium heat until dissolved
3)    Cook mixture over medium heat flame until the mixture is 300F.  You can check to see if it’s ready by placing a bit in cold water and seeing if it becomes brittle.
4)    Remove mixture from heat and quickly add in baking soda.  Stop stirring after baking soda is mixed thoroughly.
5)    Pour mixture into pan, careful not to get too much of the stick edges of the pot contents into the pan
6)    Allow to cool completely and then break candy with the bottom of a glass
7)    Place the chocolate chips and shortening into a double boiler or metal pan over hot water on the stove.  Mix, melt and stir constantly.
8)    Shut off the heat and begin dipping candy pieces into the chocolate and set the pieces on parchment paper.

Gluten Free Chocolate Layered Peppermint Bark

It’s hard to think of something more elegant, Christmasy, delicious and perfect for a Christmas hamper than this layered peppermint bark.  Delight your friends and family with a serving of this delicious homemade candy.  This candy is fun and easy to make, and the result is extremely impressive!  It will leave your family members wondering how you did it.

Ingredients:

2 1/2 cups dark chocolate chips
2 1/2 cups white chocolate chips/white almond bark
8 large candy canes chopped and crushed
4-6 teaspoons of shortening
4 teaspoons pepperment extract

Directions:

1)    Melt 2 teaspoons shortening and dark chocolate chips and add two teaspoons of peppermint extract.  Do NOT let the temperature rise over 98-100F.
2)    When chocolate is melted, pour on parchment paper lined cookie sheet.  Place in refrigerator and let this layer sit for at least 30 minutes.
3)    Repeat with white chocolate.  Work quickly when pouring the white chocolate over the dark chocolate as it begins to melt the chocolate base.
4)    Sprinkle crushed candy cane over the warn white chocolate.  You may or may not need to press the peppermint into the chocolate.
5)    Cool in the refrigerator for one hour.
6)    Score and enjoy!

Sugared Cranberries

It’s hard to get more festive than some “frosted” red cranberries.  This easy recipe makes a delightful addition to a gluten free Christmas hamper.

Ingredients:

2 cups cranberries
2 cups water
2 cups sugar
larger granulated sugar and regular sugar

1)    Rinse and dry cranberries and place in large bowl
2)    Combine sugar and water in a sauce pot to make simple syrup.  Do not boil or simmer.  Cool at room temperature.
3)    Pour cooled syrup over cranberries, cool and refrigerate for five hours at least.
4)    Pull out the cranberries a few at a time and toss them in larger sugar to coat.  Be mindful not to let the sugar get too wet.
5)    Set on parchment paper for several hours to dry
6)    Toss again with regular sugar and dry for one more hour.
